Criteria for the Certified Blue
Restaurant Program
Restaurants must meet all items listed below in order to be certified
- Kitchen hand sinks: 0.5 gallon per minute (GPM) or lower
- Dishwasher: Energy Star certified
- Toilets: 1.6 gallons per flush (GPF) or lower
- Kitchen hand sinks: 0.5 gallon per minute (GPM) or lower
- Pre-rinse spray valves: 1.1 gallons per minute (GPM) or lower
Required, if applicable*
- Connectionless or boiler less food steamers in use
- Air cooled ice machine in use
- Dipper well is heated or utilizes non-continuous flow technology
- Wash down procedures utilize a pressure washer and/ or water broom
